24 quail's eggs
24 asparagus spears
Salt and freshly ground black pepper
Juice of 1⁄2 lemon
75 ml (3fl oz) olive oil
4 large spring onions, finely sliced
100 g bag of watercress, roughly chopped
Fresh dill sprigs
Fresh tarragon sprigs

Cook the quail's eggs in boiling water for 2min, drain and plunge into cold water. Cook the asparagus in boiling salted water for 2min or until just tender. Drain, plunge into cold water and set aside to cool.

Whisk together the salt, pepper, lemon juice and oil. Stir in the spring onions and set aside.

Peel the eggs and cut in half. Put in a large bowl with the asparagus, watercress, dill and tarragon. Pour over the dressing and lightly toss all the ingredients together. Season and serve.
